Istrian fritule are small fried pastries made with flour, yeast, raisins, lemon zest, butter, milk, and a splash of rakija, a fruit brandy. The recipe was shared by Lori Joyce of Better Acres Ice Cream as part of Global News’ Cooking Together series. To make them, the flour mixture is combined with a yeast starter and enough milk to form a soft batter. After the batter rises, spoonfuls are fried in hot oil until golden and evenly browned. The fritule are finished with a sprinkle of rakija and a generous dusting of powdered sugar before serving.
